4 Chicken Breasts

2 Tbs of lemon or lime juice

Salt and Pepper to Taste

1 Tsp of EVOO (Extra Virgin Olive Oil)

Sweet Potato Hash

2 Large Sweet Potato or yams

2 Garlic Cloves (minced or thinly sliced)

2 Tbs of EVOO (Extra Virgin Olive Oil)

1/2 tsp of onion powder

Salt and Pepper to taste


Grilled Chicken

Rinse Chicken and add lemon or lime juice and Olive Oil. Season breasts with salt and pepper. Grill on each side for 4-6 minutes depending on thickness of chicken breast.

Sweet Potato Hash

Peel and cut the sweet potato/yam lengthwise so the slices fit in the feeding tube of your food processor. Attach the julienne slicer blade to the machine and shred.

Heat olive oil in a cast iron pan till hot and add garlic. Sauté Garlic trying not to brown it. Add shredded sweet potato/yam and seasoning to garlic making sure it’s well distributed and cover to cook for about 5 minutes.

Total time from prep to table is approximately 30min!
