4 Chicken Breasts
2 Tbs of lemon or lime juice
Salt and Pepper to Taste
1 Tsp of EVOO (Extra Virgin Olive Oil)
2 Large Sweet Potato or yams
2 Garlic Cloves (minced or thinly sliced)
2 Tbs of EVOO (Extra Virgin Olive Oil)
1/2 tsp onion powder
Salt and Pepper to taste
Rinse chicken and add lemon or lime juice and Olive Oil. Season breasts with salt and pepper. Grill on each side for 4-6 minutes depending on thickness of chicken breast.
Sweet Potato Hash
Peel and cut the sweet potato/yam lengthwise so the slices fit in the feeding tube of your food processor. Attach the julienne slicer blade to the machine and shred.
Heat olive oil in a cast iron pan till hot and add garlic. Sauté garlic trying not to brown it. Add shredded sweet potato/yam and seasoning to garlic making sure it’s well distributed and cover to cook for about 5 minutes.
Total time from prep to table is approximately 30min!
